<p><strong>POWER BANANA WALNUT PANCAKES</strong></p>
<p>Egg whites (use 3 per serving)</p>
<p>1/2c. uncooked oatmeal</p>
<p>1 pinch of nutmeg</p>
<p>1 pinch of cinnamon</p>
<p>1/4c. crushed raw walnuts</p>
<p>2T. powdered sugar</p>
<p>2T. Grade A Molasses</p>
<p>Mix in blender until you have a not too thin, not too thick batter.</p>
<p>Spray a pan with no fat cooking spray and pour the batter in the pan in the shape of pancakes. Add sliced bananas or blueberries or fruit of choice. Grill lightly on both sides.</p>
<p>At serving, top with a light dusting of powdered sugar or grade A Molasses.</p>

<p><strong>Ingredients;</strong></p>

<p>Method<br />
1. In a medium sauce pan on medium high heat sauté garlic and ginger 1-2 min<br />
2. Add curry, corriander, &amp; cumin and toast for 1-2min.<br />
3. Place shrimp in the pan adding nutmeg while tossing shrimp until well covered 2min.<br />
4. Stir in bell peppers and sugar snap peas<br />
5. Pour in Coconut Milk and let simmer 15min<br />
6. Fold in Lemon Zest, Lemon Juice&amp; Cilantro.<br />

<p><strong>Ingredients:</strong></p>
<p>No Fat Cooking Spray<br />
2 TBS Fresh Ginger ( minced)<br />
2 TBS Fresh Garlic ( minced)<br />
11/2c Brown Rice<br />
4c Low Salt &amp; Low Fat Chicken Broth</p>
<p>Method:<br />
1. Spray a medium sauce pan and heat to medium high heat and sauté ginger and garlic.<br />
2. Add rice and toss until all grains are coated with ginger and garlic<br />
3. Add chicken broth and bring to a boil<br />
4. Turn the heat down and top while simmering for about 20min.<br />
5. Fluff and enjoy.</p>

<p>Alice&#8217;s update as of Jan 31-By the way my blood pressure is 130/74 (BIG improvement).  And my dr says that I should be able to come off of the meds this year.  I do monitor my pressure myself so I can know when it starts to dip too low.</p>

<li>1 (14 ounce) package firm tofu</li>
<li>1/4 cup lime juice, 1 tablespoon olive oil</li>
<li>5 tablespoons chopped fresh cilantro, 2 teaspoons chili powder</li>
<li>2 cloves garlic, minced</li>
<li>1/4 teaspoon cayenne pepper</li>
</ul>

<li>Slice the tofu lengthwise into 4 thick slabs or cut into cubes and thread on skewers. Place tofu pieces or skewers on a plate.</li>
<li>Whisk together the lime juice, olive oil, cilantro, garlic, chili powder, cayenne pepper, salt, and black pepper in a bowl. Brush the tofu with the marinade. Cover the plate with plastic wrap, and marinate tofu in the refrigerator for 2 hours or overnight.</li>
<li>Preheat an outdoor grill for medium heat, and lightly oil the grate. Grill the tofu until almost blackened in spots, brushing occasionally with the marinade, about 10 to 15 minutes. <strong></strong></li>
